Hello, I have a keyless entry system on my car and it honks every time I lock the doors. I would like to use a latching relay to enable and disable it to honk. I want to use a momentary switch for this. How can I do this?

You may be better off just using a hidden toggle switch so you do not run down your battery, but you can have a look at the latching relay diagrams here: https://www.the12volt.com/relays/relaydiagrams.asp

I want to use a momentary switch because it is slim line.

Instead of using multiple relays to create a latch, I'd find a latching relay like the one seen here: https://www.the12volt.com/relays/page5.asp#sppbdl

Yes, use a latching relay. Each time you activate the coil of a latching relay, it will change the contacts from closed to open if the contacts were closed, and from open to closed if the contacts were open.
