For whatever reason whenever Im thinking of a relay setup for this, I lose my train of thought and/or get mixed up. Can anyone help with a diagram for a pitstop mode without using an aftermarket alarm? I plan on using some left over valet switches I have laying around. TIA

I wouldn't attempt this mod on a vehicle that requires a bypass, or has a transponder in the key. Becomes too complicated.
The basic circuit I envision would use two relays to control as many relays as you need for your vehicle.
One relay is wired as a latch-on, with the ground through the NC contacts of the second relay. Connect the coil of the second relay to the brake switch. Stepping on the brake releases the latch, and the engine stops. Connect your IGN, ACCY, and HVAC wires as needed to individual relays. Control these relays with the output of the latch.
Use a switched IGN as the source for the latch, so it can only be activated with the key = ON for security. Once the latch is set, the key can be turned off. If the brake is pressed with the key = OFF, the engine stalls, and is secure.
