What causes battery corrosion

Sorry for the stupid question, but I bought an '02 escalade and the positive terminal was all but gone once i got it all cleaned up. Now a few months later, and its all back...
is there something that is not correct that i need to fix to make this go away permanently?

I think it is just sulfuric acid which the battery uses to produce hydrogen gas causing the corrosion on your battery cables. This is natural, just get some spray and a wire brush.

What you are seeing is a combination of out gassing, and terminal exposure.
To properly clean any battery terminal you must first clean the posts and terminals with baking soda & water solution.
What this mixture does is counter act the chemical reaction which is / has taken place.
If you do not null this reaction, it will come back shortly as you see now.
Once the bindings & terminals are washed down, then you must also add dielectric grease compond to the terminals.
This insulates the terminals and bindings, promotes the current transfer process by ensuring a consistent mating surface.
Knowledge is power. But only if you apply that knowledge in a positive way, which promotes positive results in others.
