Do you have to use the can-bus adapter on this car or can you use a regular VW harness? Also, what will happen if I don't use the adapter?

yes you must use the can bus adapter on this car dont even attempt without it. many things can happen if you dont , check engine, air bag, etc. it can be a very bad day without that adapter.
