I am getting ready to add an after-market BlueTooth module to our 2005 Pacifica. I will be using a vehicle specific wire harness, but so far I have not seen any schematic that would indicate to me that there is a mute wire off of the head unit.

The BlueTooth module does have a mute wire that will mute the radio/cd when a call is in progress.

Does anyone have any insight into this?

Does that model offer bluetooth integration as an option?  Does the OEM head unit have a phone or mute button on the front?  If not then it's probably not possible with your stock system.  I suggest talking to the service manager at your dealership and asking if blue tooth or phone integration is possible with your model year.

I don't see a mute wire in the diagrams for that vehicle.
Would using a relay to interrupt the switched 12V be an option to you?
The switch 12V is pink/orange at the radio or amp.
The amp is located in the right rear corner of the vehicle.

Just a warning: It seems the amp is turned on by the PCI bus instead of a conventional 12V remote turn on.
I'm not sure how the system will react with the power cut while it is suppose to be on.
