I am thinking about installing a new monitor and head unit in my 99 Blazer. I wanted to install the monitor in the GM size opening, but I am not sure where to put the head unit. My first thought was to move the AC control and install the head unit there. I wanted to see if this was possible or not and to see if anyone else has a better idea.

Your best bet...Pioneer Avic-N1, no need to worry about having to relocate any radios or screens. It's all built right into it...then all you have to do is  to mount the "brain" of the radio somewhere else behind the dash.
