I've got a set of infinity 5 x 7 speakers that I want to put in a 6 x 9 speaker hole. Is there an adaptor for this?

There are manufactured adapters for that. You can also make your own out of 1/2" MDF or something similar.

You can go to any local shop and they will have them for about $15. Or you can do as fakepete said and build some out of some MDF.

MDF =  Medium Desnisty Fiberboard ( aka : Marine Grade Plywood ). It's compressed wood dust and glue.
