is it possible to time relays so that one channel will unlock and the pop the door?

yes, exept explain to me what you are trying to do.
if you are reffering to shaved door handles with poppers then why do you really need door locks? if you want a factory working door handle with the locks and want them to act like you shaved the door then you need more parts and alot more time.
