I'm trying to find out which wire in the harness to the stereo tells it to shut off when the door is opened or 10mins has passed after car is turned of.

The Class II 3-wire system (power, ground, data) data wire, but since it's a data wire it is also used for other functions.

I know what wires are there, I need to physically know which wire is what though.
