I was wondering if there was likely to be any problems caused by adding a wire to connect the chassis and the battery negative terminal. This would be in addition to the chassis -> engine connection, and the engine -> battery connection.
Thanks in advance.

I haven't had any. I have the stock wire, my winch provides a battery-chassis ground on the very front and I have another wire from the battery to a bolt about 8" from the battery. The more grounds you add, the more paths the voltage has to return to the battery so there should be less potential between spots.

You really can't have too many grounds. Especially if the factory or other grounds are old and/or questionable.

True adding additional ground wires provides a larger path for return current to flow back to the battery, but remember that If you upgrade only the ground and are not upgrading the battery positive then any components tied in to the stock wiring are not gaining much if any. Big three upgrade is the best. Once the car is started the alternator produces the supply current, so upgrading the ground from the alternator to the frame is equally important. This is true of the feed wire from the alternator to the battery as well. Might as well since you're already in there.
