i have a question can a normal stereo head unit be changed to have 5.1? if so how?

No, but if they exist, you can get a 5.1 outboard decoder, and connect it to your exisiting HU. I have never looked for one, personally I think surround in a car is 1: pointless, and 2: impossible to pull off really well, not necessarily in that order. Do not let my opines get in the way of your plans, if you want to do it, go for it, if that's what you like...

I was unable to find any outboard decoders, but here is an all-in-one deck for you to take a gander at.

The head units that can do the internal imaging work about as well as you could ever ask for surround sound... A couple references in my experience: Pioneer DEH-P8600 (I found it amazing that my girlfriend in the passenger seat was hard to hear at a moderate volume and I'm not deaf) and the Eclipse 8454 (Have yet to test this function, fighting over a bug this unit has. :-/ )

Personally I had a great experience with the Pioneer's ability to do that. Nice full surrounding sound.

Yes. The only companies I know from the top of my head are Clarion and Pioneer. To do it, they use Dolby Pro Logic II, which converts a stereo signal into 5.1. This is done with their respective processors. The one that Clarion offers I believe is compatible with any head unit via a set of RCA's from the head unit and a remote for the processor. You could also hook it up directly to a Clarion head unit without the need for the remote.
Here's the Clarion processor.
The Pioneer one must use specific dvd head units, so using this one just for 2 -> 5.1 is very impractical. The Clarion is better for what you want.
