I have a 1998 Ford Ranger and I'm trying to install a Pioneer head unit.  My only problem is I can't figure out which wires coming out of the truck are which, please help.

Before you cut the factory harness, go down to your local stereo shop and purchase an aftermarket harness. This will save you time and headache, especially if you sell the truck down the line and plan to re-install the factory HU. An aftermarket harness will run you about 10-20 bucks. With one of these, your install should be self-explanitory.
