I will be adding another kicker cvr12 to my car it already has one cvr12, which amp would be the better choice to power both of them, the kicker zx750.1 or the zx1000.1? around how much db would this set up hit?

I would go with the 1000.1 you will have more room to upgrade if using that amp, and its a very sturdy amp.
The DB output is based on alot of things, box design, vehicle, tuning, ect ect.
It could be anywhere from 120DB to 150DB depending on application
