Do "they" make a wiring harness adapter that will let me hookup a signal processor/line out converter to the stereo without tapping into the existing speaker wires? I am thinking something that you place between the factory wiring harness and the factory head unit with lead outs for hooking up the line out converter.

I don't believe so. I think they used to for cdchangers or radio relocations but why not just hook up the speakers. If you don't know the colors this site has a great vehicle wiring database.
