So I was planing on getting one of those 12v to 5v USB to have another usb for running accessories (this case a streaming stick for running media to back display ). I was thinking to splice/tap the outlet socket but couldn’t I just be able to use the red ignition/accessory wire from stereo as the tap or would that cause any problems with the usb /stereo?

I don't think you have an accessory wire at the stereo. It's most likely handled by the CAN bus.

Which harness did you use to do the radio install?

@geepherder sorry I meant the red wire normally used in stereo install (the ignition/acc one) since its 12v technically ?
@i am an idiot I used the iDatalink HRN-RR-GM2 Interface Harness to maintain all the stock controls and such .

The Maestro RR has 15 amps of current capacity on the acc wire output. I did not check on the RR2. But I see no reason it would be less. So yes, you can use that wire to power your usb adapter.
