I just purchased a Kenwood DPX594BT to replace the factory head unit in a car. It's been over a decade since I did my last head unit install and am wondering if modern head units have a built-in lithium or whatever battery in them in order to maintain various settings and the station memory when a vehicle's battery is disconnected.

I have yet to come across a head unit that can retain memory and settings via a built-in battery when totally disconnected from the cconstant power source. I've been "in the industry" off and on since the 1990's. I can't say I've seen it all, but I've installed a few head units here and there. The closest thing I have seen is a settings restore feature on Sony Bluetooth-enabled headunits that restores the head unit's settings when connected to a smart phone with their Sony Music Center software installed.

Many years back, Alpine had full chassis pull out radio's that did have a battery in them to retain the presets. Today, if the radio is fixed or even a removable face style, there will be a memory wire hookup for it and no battery inside of them. Some "might" retain some length of memory if totally disconnected but it may be due to a built up charge in a capacitor inside the unit.
