Is it safe to wire 2 radiator fans like this:

* the fans were taken from a 2000 Acura Integra
* standard automotive 30A relay
* oem Toyota Tacoma switch

What wire guage should I use?

How big are the fans?  Do you have any idea of their current draw at startup? 

I would use one relay per fan, and delay one of the relays in order to not be so taxing on your charging system.

The fans are 12" and 11".

I don't know their current draw, been searching this afternoon for more
info about the fan specs but wasn't successful.

I like the idea of using one relay per fan, but would like to use just
one switch to power both relays. How can I wire it this way? What wire
guage should I use?

I'd run 2 x 40 amp relays with about 50 -60 amp fuses, use the top diagram with one relay per each fan.
Somewhere in there should also be a thermal (automatic temp switch) and an AC derived switch.
Oh look I've just eliminated your need for a fan switch.
