I'm going to mount my seperates and need to know if I can mount the crossovers in the newly found space under the HU, or should I mount the crossovers in the doors to keep them close to the speakers? I can mount them either place but would like to mount them under the HU...

Doesn't matter--whatever is easiest for you. If the wire run is going to be longer though, I'd recommend 12 gauge wire for the connections.
That should be fine under the head unit. one question i have for you is are you running power to these from an amp. If not then you should as you will not get full potential from components without an amp, one thing to keep in mind is components use a lot of speaker wire to run you may be better off wiring these close to the amp or under a seat somewhere to keep the amoount of speaker wire minimal
this all would really depend on where the amp is though good luck.
put the crossover networks under the head unit.
in the doors they will be subjected to weather, rain water, and other nasty things not good for them. Remember, the only thing keeping water out of the door interior is that thin rubber strip along the edge of teh window and door.
also if you are going to power these from an amp you really don't want the potential of water shorting out the crossover and thereby shorting your amp too.
