If you haven't seen it or used it, go check out King Starboard marine poly. It mills super smooth, is wood-tool friendly and comes in 6 or 8 different colors. It is kind of spendy, but is super durable and is great for anything you can think of in your project! I use it a lot for trim panels over amp racks, radio delete panels custom radio enclosures, mounts for gear. If you use it right, route it nice, countersink all your hardware, it will end up looking so much more professional than some cheesey painted or carpented mdf, or crap backstrap creation that I have seen way too many installers use.

Starboard is nothing more than UV-stabilized HDPE, the same thing some cutting boards are made of. If you don't need the UV-stabilization, like if you're going to paint or cover it, then just search for HDPE sheets. Might not be able to find it in 8 different colors, but paint is cheap.
