I am building a custom console for my '86 C10. It's nothing spectacular, just MDF, foam and vinyl (no fiberglass). I will be adding a Kenwood Double DIN head unit to it. Will I be able to insert the head unit directly into the face of the console or do I need to buy a Double DIN kit, place that in the hole, then install the head unit? If I need a kit, will any kit do? I was looking at this:

All the Kenwood double din units come with a metal mounting sleeve and plastic trim surround to mount them into any panel. You need to cut the correct size hole and slide the metal sleeve into it. Bend the tabs to secure the sleeve to the panel. It is basically the same as any din radio, just twice as high.
