I am about to start building a fiberglass box in my trunk. But I dont know what weight to get of chopped mat. Do I need 2 oz. or 8 oz. or should I get something between. Also is the cloth better than the mat. If so what oz. should I get.

Use 8 oz. for building it up fast and it's preference as far as mat and cloth. I prefer mat as it's easier to owrk with when building thickness for enclosures because of it's texture, it sticks better to the layer before it and doesn't bubble up as much.
