I had an amp and sub set up that was basically unplugged and removed from my car, I was given a replacement, xplod XM-2165GTX with an 1100 watt xplod sub. I have been able to attach all the cables except for the one connected to the power/volume of the sub control in the car. This looks like a phone plug in. What do I need to plug this into or what kind of adapted do I need to make this work?

the remote loudness/base knob would only work if the amplafier you are installing now is the same as the one that was stolen.  if indeed it is, look for a phone jack like plug.  if not, just get rid of it.  hope that helps answer your question.

That answers my question, but it was not the answer I was looking for. It is a different amp... Can I get a new remote loudness/base knob when there doesn't seem to be anything on the amp for it to plug into? Where can I buy something like this?
