I want to buy a 4-channel amp but I want to know if I can leave 2 channels un-used so I have room for a speaker pair upgrade. Is this possible?

Yes it is, you can also use all 4 channels of amplification on your 2 speakers by bridging the amplifier. This can also be done with a 5 channel amp to turn it into a 3 channel amplifier.
