I bought the Dual XHD6425 back when it first came out because it had a front USB port, audio in jack, and built in HD.  All of which I use.

Well recently the left channel stopped working.  Sure; I'd crank it to full volume at times.

I currently only have the stock speakers.

I want to know if I get an amp, if both L/R channels on the pre outs are going to work?  Or am I in the market for a new head unit?

That depends on where the failure is inside of the radio. If it is in the preamp path before the output chip, chances are the left RCA jack is out too. If it is a problem with the output chip of the radio, chances are the left RCA will be fine.
