Lets say I am looking at an amp that is rated at 75W X 4 @ 4 ohms and 100W X 4 @ 2 ohms.  If I hook up a 2 ohm dual voice coil sub and 4 ohm components will I get 100W to the sub and 75W to the components?  Or do all the speakers on the amp need to have the same ohm rating?

You will be sending 200 watts to the sub, and 75 watts to each door.   Your speakers do not have to be the same.  This setup will be fine.

Each voice coil should be wired seperately right?  Not series or parallel?

You said you only had one set of terminals on your box.  Bridging the amp and wiring the voice coils in series will be your best bet.

I think it was me who only had 1 terminal on my box.

That was definitely the case.  You can wire one voice coil to each channel of the amp, or bridge the amp and run the voice coils in series.  The amp will make the same amount of power into either of the 2 configurations.
