I have an 03 Suburban it has Avic N2 with the pac steering wheel control that plugs in.  Now I want to put a DD into it. I got a Eclipse AVN 5510 coming, now if I get the pac steering wheel controls do I need to use the universal or the one for Eclipse?

Next, I have the chance to pick up a Pioneer F900BT, will my pac steering wheel controls for Pioneers plug into it and work?

I also have a 98 Grand Prix, has anyone tried putting a DD into it? I am thinking the Pioneer F900BT .

The pac universal control requires you to mount an infrared trnsmitter somewhere in view of the remote sensor of the deck.  The Eclipse specific piese would be a better option. 
Yes your existing sWI-PS piece will control the newer Pioneer unit as it does the older one.
