I just bought 2x Kicker SoloClassic s12c 12" subs. they are 2ohm dual voice coil. I am running a Kicker KX1200.1 amp, that is 1200 watts rms at 1ohm. I found diagrams on this website that shows how I can wire it up, my problem is its giving me the option of running at 0.5ohms, or 2 ohms. my amp can't handle the 0.5ohms and I'm thinking that running it at 2 ohms won't be giving them enough power because the amp will be running at half power. Any ideas?

Since you already have the equipment, run the amp into the 2 ohm load and see if it does what you need it to do. For future reference, it is usually a good idea to buy the right woofers for the amp you have. Or Vice Versa.

Yeah, you bought the wrong subs. Should've gone with dual 4ohm.
