I'm just wondering the correct way to install 2 12"infinity reference 1262w dvc in a sealed box? They came with some cushioning tape like stuff and I'm not sure what to do with that

Are you talking about how to mount the drivers to the enclosure? Yes, using weather strip tape is one way to seal the driver frame to the enclosure. I like to use pliable gasket material like this: Parts Express caulk And then screw the driver to the front baffle.

How does the weather strip make a seal with a carpeted enclosure?

Stick to back of woofer frame with foam side toward enclosure. Screw down. Is it a perfect seal? No. Will it matter? Sounds like you are using a prefab enclosure, so no.
