Would there be any problems in connecting the speaker outputs of a head unit to the high level inputs of an amplifier in addition to the speakers? It just doesn't sound right to share the speaker outputs to power the speakers and the amp inputs.

That is fine. The amp high level inputs don't present any meaningful additional load to the HU output.
