i have two ulitmate kw1200 dual 3ohm subwoofers & i'm needing help wiring them to a Ds18 Candy-XXL1SL amp so would i wired to parallel or in series

Your best option is to wire them in series/parallel as shown in the image below (image shows 4 ohms per coil) for a 3 ohm load to your mono amplifier. If you wire them all in parallel, you would have a 0.75 ohm load, which is too low for your amplifier. If you wired them all in series, you would have a 12 ohm load, which is safe for your amplifier, but power output will be significantly lower.
