I'm thinking about putting a sub into my car keeping the stock head unit. I was wondering what the difference between a hi-lo conveter and a line out converter? Thanks.

There are 2 types of Line Out Converters.
One is made to be installed After a factory amplifier (commonly referred to as a High/Low converter), and the other is made to be installed Before a factory amplifier (commonly referred to as a Line Driver).

A High/Low converter takes a High Level signal (already amplified) and converts it back into a Low Level signal (non-amplified).
A Line Driver is used to increase/adjust the low level signal comming straight from the headunit.
