I want to make plexiglass windows in a .75 MDF box, but I dont know whats the best way to attach the plexiglass to the mdf, it seems as if screws would keep getting shaken a loose from the vibrations of the subs, any suggestions???

When making plexi windows for enclosures, use bolts and counter sink them into the plexiglass and use a vinyl nut with Locktite, this will ensure that the bolts do not shake loose.

if making a 6x10 plexiglass window in a 1.2 cuft box with an eclipse aluminum 15 what thickness should it be? can i stack thin ones to get thick?

Make it 5/8 or 3/4 should be plenty strong enough. I would go for 3/4 myself to allow for the a stronger flush mounting onto the face of the enclosure.

If you want strength you can double up the enclosure wall the window will be in. On the outer panel of the enclosure cut out the hole for your plexi to fit into. On the interior panel make it 1/2 inch smaller then the outer hole the whole way around. Then mount the plexi into the exterior panel. And fasten it to the interior wall of your enclosure. If you use this method you will need to use the same size plexi as your exterior panel of the enclosure.
