i would like to know if there is an actual need for a crossover. i have a punch 800 that i am putting on three pioneer 12's and i have an 840 watt power acoustik amp for my high. do i actual need to put a crossover in this setup and if so what would be the correct way to wire it

Assuming you are using the low-pass crossovers built into the sub amp, no you don't NEED a seperate crossover.  Will it give you better setup flexibility and potentially sound better?  Yes.  It's up to you.

suppose your speakers come with an external crossover like infiinty, but they are not adjustable

would it sound alot better to add a electronic crossover or jus use the one on the amp

If you buy a high quality one from some one like AudioControl then it will. These usually include line drivers also that make your preamp singal stronger which = less noise = better sound.
