I have bought a pair of diamond speakers cm3 10" dual voice coil subwoofers 2 ohm coils. The amp that I am running is a Phoenix Gold 500.2 Tantrum, which is rated at 125w x 2 (4ohms stereo) and 500w x 1 (4ohms bridged), and I am running the amp in bridged mode. How should I set up my 10" subs and amp to get the best use and bass out of them as possible.

As you can see here, the subs won't achieve a 4 ohm bridged load:

would the last one give me the better results out of the 3 that u shown? just want to make sure to get the best use out of what i have.

The last one is the only one that wont shut your amp down. You can try the second one and your amp may run it or it may not. It is not rated to be two ohm stable in mono but you can try it.

I didn't search the PG website but looking at it here https://www.onlinecarstereo.com/CarAudio/ProductDetail.aspx?Productid=12988  the specs show 1 ohm stereo capable.  If this is true you want to use the 2nd picture.   Those subs are rated at 500 watts RMS, so you need to get a lot more power to them than the 8 ohm bridged will give you.  Check your owner's manual for specs on the amp.
