I have a pair of sony xplod xs-v1633 6.5" 3 ways and xs-v933 6x9" 2 ways and I want to put in high pass crossovers in line with each speaker so that I can block the bass and crank them up to full potential (i want to get them as loud as I can). I am running a pair of 12's so I have the lows covered. What freq should I build the high pass crossovers at and what freq should I set the lowpass on the amp at so that I can crank the stereo up and get the most out of the 6.5's and 6x9's?

In general, 6X9's can go down to about 70Hz before they break up and 6.5" coaxials tend to break up around 100 Hz. Since 100Hz is a good round number, start there with your high-pass filters for all four speakers and for your low pass to your subs.
As far as "cranking" the stereo up to be as loud as possible, that will depend more on your amp/speaker combination than on the crossover settings per se. Sony speakers are not known for the best "cranking" ability. What amp are you using?

what voltage rating should I use for the capacitors for my crossover? I want to go pick up some caps from radioshack or somewhere for cheap but I need to be sure they are strong enough. also, where can I find good coils for a good price?

Never use less than 50V caps. 100V is better, 250V is best. DON'T buy cheap caps at Radio Shack as they will sound like crap. At the very least get some audio-grade non-polarized electrolytics from some place like Parts Express. They also carry pre-wound inductors.
