I would like to know when it says on a spec sheet  75W RMS x4 @ 4 Ohm Stereo and 125 RMS x 4 @ 2 Ohm stereo

If I am putting all my speakers on a amp how do I make them 2 Ohms to get the most power?

It depends on the speaker.  What are they?

Each speaker has impedance (resistance, basically), or qualify as a load on a circuit. Using series/parallel computations, you can match a speaker to the load an amp needs to properly function.
