I have a 100w 2 channel (50x2) amp that is not bridgeable and isn't 2ohm stable and want to use it to power a sub. What is the best way to connect this amp to acheive maximum performance and stablilty?

well in this case with this little amp you can only hook it up to one sub either left or right side.

Would the impedence go down to 2ohm if I try sending both channels to the sub?

The sub is going to be 4 ohm no matter what you do. If you "send both channels to the sub" you'll short it to itself and it will blow. You should just save your money and get the right equipment.

I agree.. Dont try to bridge that amp. Just get another one if you want more power.
