I know there is a big difference in price, but I want to know people's opinion on which is better.  The JL Audio 1000/1 or the US Amps DE-1000?

Wish I had such a dilemna as choosing between these two amps!  I like the JL better.  They both have great features and true power output, but the JL will provide the same 1000 watts into any load from 1.5 to 4 ohms, which gives you more flexibility in choosing/replacing subs.  It also has a switchable crossover, either 12 or 24 db/octave so you can choose the best transition to your midbass drivers.  A better THD, too, but you wouldn't notice the difference.  And better S/N ratio.

Both amps are good amps.  The JL seems to be a little bit cleaner than the US AMP but when it comes down to power wise but it's a close call.  The US AMP is a digital amp and I remember reading a while back that these amps are very smart amps and can also be programmed to push more power than rated for.  But, other than that I agree with stev,  I wish I had your problem.
