Let say I got sub which is 500rms and 1000 peak do I need amp twice more power than sub rms??????

Huh?  No, in general you should use an amp that puts out the same or less RMS equivalent power than the sub is rated for and then carefully set it up so the input gain matches the output voltage level from your head unit and so nothing is clipping.
