I got my bro a Pyramid Deck that does NOT have a SUB OUT RCA lead unfortunately. It has a pair of pre-outs, but they are left/right. I also bought him 2 x 10" 700 watt subs and a 1000 watt 2 channel amp .
What I want to do, is somehow make sure that I am only sending a Mono signal to the 1000 Watt amp to power both subs. I had never thought about this as in my little tercel, I just have a bridged 2 channel amp with just ONE sub, so it's definitely mono.
How can I hook up 2 subs with a 2 channel amp while maintaining a mono 4-ohm load?

Just as a sub-note - I saw a 7-band EQ for sale with a sub-out... would that be a good way to go?
I figure if the 7band EQ has just one sub out RCA , then I can split that to 2 RCAs to the 1000 Watt amp to assure Mono'ness. :)
First of all, you should know that pyramid stuff is pretty much bottom of the barrel as far as car audio products go, but since you already have the stuff you might as well hook it up.
The left and right preouts will work fine. There should be a switch on the amp that says LPF and HPF, set it to LPF. This will only let the mono notes to go to the subs. If the amp does not have this option its most likely a mono amp, and you wont need to worry. As far as the EQ, i wouldnt recommend it. Cheap EQs dont help much, and can actually hurt the way the system sound if the settings are incorrect. EQs are fairly pointless in car audio in this day and age.

yep, if youre going to put money into the system, ditch the eq idea and get a deck with decent eq options and a mono sub preout
