Would anyone be able to help me with the wire colors after the amp, trying to install amp off factory head

Check with a VW dealer. They will have all the wiing diagrams for the car, OR look at the back of the stock speakers - the wire connected to IT will very likely be connected at the other end to the amplifier.

your amp's sound would be a little better and less distorted if you used the lower level outputs behind the head unit.
