All the features sound good. But me personally....I dont like any Sony electronics for cars. Theres always something that happens to them.

I agree with godd dan it.   Sony makes excellent products for home,  but you can find better companies for the same price range for a car....  Try and stay away from the Sony if you can...

Mono is typically for Subwoofers,  whereas you usually use stereo for all other speakers...

I was reading up on the amp it most of them say to run the amp stereo and not in mono because it will fry. What are you thoughts on this?

You run it in stereo because the subs you said you had were 4 ohm each,, if you were to bridge the 2 subs you have you would get a 2 ohm load which is too low for that amp to handle.  Notice how it says 4 ohm bridged 500W .  So with that amp your only option would be to hook up 1 sub to each channel.  Personally i would get a 500 W RMS mono sub amp stable to 2 ohm, you can find lots for cheep.  Whats your price range?

Yeah, sony bad. HISSS

Sorry, I got a guy around here that will swear by this Sony Xplod crud and it drives me nuts. He just keeps trying more and more and more power to make them not suck, and it is ok, when he has it at like 50-65 percent power I can hear the bass 15 feet away. Wait, that's like boo isn't it? Sorry, I like my bass and he's gonna freaking be embarassed to show up at work with his on when I get mine all wired up and running. Not to mention my interior quality rules.

If I run the subs in each channel in stereo, and the subs are rated at 200rms at 4ohms, wouldn't it be ok? Since the amp is 200rms X 2 @ 4ohms?

Another question, is it going to be loud with 2 12's in a Civic hatchback?

It will play to a respectable level, don't expect it to suck air out of your lungs but yes it will be loud enough to cause permanent hearing damage. Play your stereo sensably, do not listen to it for prolonged periods of time at max output, you will never regain your hearing.
