I have a kicker 8"L7 which is 2 ohm.  I was wondering if it is better to have a two ohm or a 4 ohm L7.  I am going to hook the sub up to a 2 channel amp (MTX thunder 2300) around 600 watts.  Also, how would I hook the sub up to maximize the amps potential.

That's a Dual Voice Coil sub. In your situation its probably better to have the 4 ohm model but yours will work. That amp is not stable below a 2 ohm load so you will have to wire the speaker in series. That's from + to - to + to -.  If you wire it in parallel you will show your amp a resistance of 1 ohm and your amp will overheat.
