I have an old Sony DIN-sized EQ that I am fond of that has one of those bouncing light displays for different frequencies.  It has a sensitivity setting, but even at the lowest setting the display is maxed out because the input volume is too high.  The head unit's volume is only about 1/2 up when the display maxes out.  The only way to get it to work correctly is to set the amplifier gain controls higher so the max volume is reached sooner.  What could I do to lower the signal going to the EQ?  I had used the EQ with a HU that had 4-volt pre-outs going to the EQ, but the one I am using now has 2-volts.  Does that make a difference?  Call me silly, but I really like the way the unit looks more than the equalization, and right now the outputs going to the amps bypass the EQ.

There is a simple, inexpensive, adjustable solution to your problem. Soundgate's SNAVM2. A knob in a box with a stereo pair of RCAs in adn a stereo pair of RCA outs.

Keep the signal to the amplifier as good as it can be.  If that means that halfway on the deck is max volume...so be it.  Don't introduce a device that deteriorates the strength of the signal for such a reason as this!  The only good reason I can think of for doing something like that is if you were using an older amplifier with a high output head unit and couldn't get the gains set because of the high input voltage.
