I understand how normal caps work, but I was wondering how hybrid caps work?  do they incorporate any of the old technology or are they completely different?

Same... no difference, except in the internal materials...

Here's a thread on this very subject, and why one is "better" than the other. I'll spoil ending for you - use an electrolytic wherever possible, hybrids are much "slower".
