I have a Kicker 350.4 amp to run my 4 door speakers.  I was wondering if I can bridge the amp and run it in two channels.  I dont really care about fading the system, Or should I just run it in 4 channel mode.  I wasa just wondering the drawbacks to either way.  Thanks.

You should not run that amp at less than a 4 ohm load due to the lower output quality at 2 ohm.  That in itself is reason to use this 4 channel amp for 4 speakers.  Sometimes with starter systems, someone (I have done this myself) will try to use one amplifier to do the job of two, mainly because the money isn't there yet for the proper setup.  This is where wiring speakers together to get everything connected to the amp comes into play.  It's a bad idea and will cost you unnecessarily in the long run.
