what is the right way to wire 2 amps to a single sub? In what way would you wire it to give you twice the power as just wiring one amp?

Stop right there. Do not pass go, leave the hot chicks for me. If the amplifiers are strappable then you can do this. Otherwise not recommended at all. A strappable amp system basically uses one amp as the + speaker lead and the other amp as the - speaker lead. One amp is controlling the other amp in this situation, so there is a connecting wire between the two of them. If you have two amplifiers of brand xyz that are not a strappable type amp, you are almost destined for failure in both the sub and the amplifiers.

Common sense tells you to just buy a bigger amp.

Build the box so that it performs well in the worst case scenario and, in return, it will reward you at all times.
