I've connected a Pioneer Premier CDX-P2000 CD Changer to my DEH-860MP head unit and I am getting an error message, "Error 60". Can anyone tell me what this code means?

error 60 means that you have a electrical or mechanical fault.

pioneers website says to turn off ignition, then back on.   you probably tried that already.  i would check all connections, make sure you dont have any bent pins on the connectors.   you might have a bad changer though.

would the horizontal/vertical settings on the side of the changer cause such an error?

If set wrong, they could cause the changer to skip more, but shouldn't give you an error message.
