While trouble shooting a problem with a deck I just installed in a 2006 altima I noticed that the decks ground wire had come undone but the deck was still working how is this possible

The head unit is still grounded through its chassis and/or antenna.

Its grounding through the antenna but you still want to hook up an actual chassis ground.  The antenna ground isn't sufficient to fully power an aftermarket deck--so if you turn up the volume really loud (while using only the antenna as a ground) you will often times find that bad things happen such as the deck turning off, cutting out, dimming etc.
