16-14AWG for speakers and 12-10AWG for subs.

It kinda depends on how much power is going to the speakers and/or subs.  For the majority of non-competition systems I think 12 gauge wire for the subs is more than sufficient; similarly, 16 gauge wire for the full-range speakers will sound great too.  Obviously if money is no object and you're not worried about having to run all these many pairs of wires throughout a vehicle (under the carpet, behind trim panels, etc.) then just follow fakepete's guidelines.
